SOUS CHEF - MAISON BAB

Maison Bab is a modern, eclectic kebab house located on Mercer street, Covent garden. Led by team of ex-Le Gavroche chefs, we are striving to create delicious and imaginative dishes that make the most of seasonal British produce, while respecting the great culinary heritage of the humble kebab. Backed by a bespoke drinks offering and set in a contemporary restaurant, we offer a stark departure from traditional kebab houses for those wanting to get a new perspective on a much–loved cuisine.

JOB DESCRIPTION

Our focus is to serve the highest standard of kebab possible, taking inspiration from global kebab cultures whilst only using the best of British seasonal ingredients. We are looking for a sous chef who will help us achieve that aimWe’re offering a great opportunity for anyone who wants to both learn and create, feels that they have outgrown their current role and excels with responsibility. As sous chef you will be relied upon for ideas and contributions towards recipes and techniques, as well as for the administration and management of the kitchen. Any experience of cooking Middle Eastern food would be favourable but not necessary. Previous sous chef experience is a must.

RESPONSIBILITIES:

  • Leading services and supervising MEP

  • Menu development

  • Ensuring a high standard of food production throughout the main kitchen and prep kitchen

  • Establishing and maintaining strong supplier relations

  • Training and teaching junior chefs

  • Assisting with HR matters, such as recruitment and rotas

  • Overseeing stock management and ordering

  • Making sure safety and hygiene measures are being followed at all times 

  • Keeping the kitchen in the cleanest and most organised state possible 

  • Liaising with FOH management on food training and service interactions

IDEAL CANDIDATE SHOULD: 

  • Be passionate about food and working with great produce and people

  • Have experience working in similar job role 

  • Be able to work quickly, cleanly and efficiently

  • Be diligent and organised in managing a kitchen operation

  • Work well as one of the leaders of a tight team 

  • Have high personal standards of hygiene 

  • Be forthcoming and confident with fresh ideas for development of the menu and kitchen routines

60 hours per week
